I bought a Strange Genuine Foppish for 1 refined on a trade server one day.
I could've also bought a Strange Vintage Stockbroker for 1 refined from the same guy but I didn't have another refined on me. But I simply used a stockbroker strangifier I won in a game on a vintage scarf I bought for 0.66. So I guess I made profit either way? (They're for personal use so I got a good deal rather than I made profit.)

Oh no, he was SELLING them for 1 refined, I didn't offer 1 refined. I even asked him why he was selling them for so low but he only gave me a vague answer of "I don't want them anymore." Besides, it was from a guy I frequently saw on that server and we had added each other and played together before this trade had happened.

I don't see how I sharked the guy if he knew that he was losing profit and he was fine with it. I even pointed it out to him but he was fine with it. I didn't manipulate him in anyway.

We seem to have different definitions of what a "shark" is.
Its not sharking if the person is willing to sell an expensive item for a low price. Read what he said then reply.
If you don't understand, then I will give you irl example.
Suppose, a house costs $260, 000 but the owner is willing to sell it off for only $210, 000
The buyer knows the house costs $260, 000 on the market. Is the buyer sharking? No, he is paying what the owner asked for.
That is irrelevant. If the buyer of this house (which btw doesn't have as big of a discount as knave got) doesn't tell the seller that he's selling the house for way less than he could sell it for and just buys it, it is sharking because the seller is unaware of the value.
